Received her Ph.D. in Nutrition and Food science / Food Microbiology and safety from University of Jordan in 2004. During her Ph.D., she worked on enterotoxin production by some spores and non-spores food pathogenic microbes. and studying the prevalence of food poisoning in different Jordanian province. She taught several courses in Nutrition and food safety and Microbiology including principles of Nutrition and Food science , Food Safety and hygiene , Food Microbiology, Food epidemiology, food ecology, general biology, general microbiology, Human nutrition, Nutrition through life stages Food technology, scientific writing, seminars, advanced food microbiology to master students, and supervised several undergraduate and graduate students to conduct their research projects at her laboratory. She has Full Membership in Organization for Women in Science for Developing Country (OWSD), she is a member in Jordan Society For Scientific Research (JSSR), Dr Sharaf has published several scientific papers through different research proposals granted as principal and associate investigator, in different abstracted, refereed and indexed Journals. Most of these papers were in the area of food microbiology and toxicology ( food safety) . Microbial Quality of Street Food in Karak" that is partially funded by Mutah University , Aflatoxin M1 in human breast milk. Aflatoxins in raw, pasteurized and baby infant formula milk available in Jordanian market. Survey of breakfast and infant cereals for aflatoxins B1, B2, G1 and G2 available in Jordanian market,"The inhibitory effect of selected plant extracts grown in south Jordan on Growth of S. aureus, P. aeroginosa, E. cloi O157:H7 and Listeria monocytogenes" funded by Mutah University. The inhibitory effect of plant extracts, nisin and probiotics on growth of E. sakazakii". Partially funded by Mutah University. Antifungal and Antioxidant effect of some Plant extracts selected from South Jordan . Antibacterial, Antioxidant activity of some Plant extracts Grown in south Jordan . recently Halal Food in Jordanian Market is her concern and Halal authentication of raw meats using real time PCR technique . Also she has participated in several local, regional and international meetings to present her work as speaker and keynote speaker.
